Glutenfree apple muffins


These glutenfree cakes are easy to whip together when unexpected guests show up at your doorstep,
or you want a nice after-school snack for your kids but don`t really have time to bake.


What you need for about 12 medium sized muffins:

* 4 eggs
* 2 tbs honey
* 2 tsp cinnamon
* 200 g ground almonds (or any ground nut)
* 1 grated/chopped/cut green apple without skin


How to make this dish

Beat the eggs and honey together in a bowl.
Add the ground almonds and gently mix it in.
Turn in the apples.
Fill muffin forms 3/4 full with batter and
place in preheated oven 180°c for about 20 minutes.
Let cool of before serving.



You can of course add raisins or other dried fruit to this recipe as well. The more, the tastier.
