COD & SWEET POTATO MASH & APPLE SALAD

Sweet potato and apples are two of many great fall foods which I just love.
So diverse and adaptable, these are easy to integrate into your basic dinners.
Here, in todays recipe, I let them speak for them selves; only paired with simmered cod.

INGREDIENTS

For 4 servings you will need:

* 500 g fresh Cod
* 3 medium sized Sweet Potatoes
* 1 Lemon
* 3 Apples, peeled and pit removed
* 1 small Shallot
* Extra virgin Olive Oil
* 1 cube Vegetable Stock
* 4 – 5 dl Water
* Salt & Pepper
* Fresh Dill

HOW TO MAKE THIS DISH

Heat up the water with the vegetable stock cube.
Peel the sweet potatoes, cut them into cubes and add the to the boiling water.
Let the potatoes get so soft that you can mash them with a fork.

Peel the apples and cut them into cubes.
Place the apples into a serving bowl and drizzle lemon over the apples to keep the white color.
Slice the onion into small pieces and add to the apples.
Mix everything together and set aside.

Get the water for the fish simmering.
Add a teaspoon of salt to the water before adding the fish.
Let it simmer for about 8 minutes.

While the fish is simmering, mash the sweet potatoes.
Add black pepper and the juice from half a lemon and a good swirl of olive oil to the mashed potatoes.
Mix well and set aside with a lid on to keep it warm.

Start plating when the cod is done: sweet potato, cod and apple salad with a sprinkle of dill on top.

TIP

Sweet potatoes comes in varieties.
The ones with white or pale yellow flesh are not as sweet as those with red, pink or orange flesh.
