We have all heard about how breakfast is the most important meal of the day, right?
But why? Why is the food we eat so early in the morning, when we feel we should still be in bed, the food that gives us the most?

Imagine that your body is fasting while you sleep. Your body is re-setting it self, sort of. So the first meal you eat in the morning re-activates your body – fills it with new energy, and actually lowers the stress our body produces every morning around 7-8 o`clock.

So, what do you feed the body this early to get it going and keep it going all the way to lunch-time?
A coffee and a donut won`t do it I`m affraid.

Here are a few examples of breakfasts that keep my body going and mind focused.

Scrambled eggs with chicken-ham, tomatoes, cucumber and hummus.

Crisp rye-bread topped with avocado, lemon, black pepper and dried chili flakes and/or topped with cherry tomatoes, chia seesd, salty flakes and chives.

Polenta topped with avocado and a fried egg.

Natural yoghurt topped with rye- and spelt-flakes with dried and fresh berries, half a grapefruit with a swirl of honey.

Egg-muffins with mushrooms and pumpkinseeds.
Chop up the mushrooms and place a topped teaspoon full in each muffin cup. Add 3-4 pumpkinseeds. Whisk the eggs together with a little salt, pepper and what other seasoning you prefer (cumin, paprika and oregano are some of my favorites).
Pour the eggmix over the mushrooms filling the cups half full.
Bake in preheated oven, 180 C for about 15 minutes. Serve immediately and be prepared that they will collapse once you take them out of the oven. No worries though, they taste delicious!
